A stay with Villas Saint-Jean is shaped less by the square metres beneath your feet than by the people who answer the telephone before you have even thought of the question. What follows is a long, honest account of what our concierge actually does — and what it does not.

Who answers the phone

One team, in Villefranche-sur-Mer, on call in three time zones.

Villas Saint-Jean was founded in 2009 by Étienne Maréchal, formerly chef concierge at the Hôtel du Cap-Eden-Roc, and remains family-run, still headquartered in Villefranche-sur-Mer. The concierge desk is staffed by six destination concierges supported by four property managers, two in-house private chefs and two reservations specialists — fourteen people in total, available twenty-four hours a day, seven days a week, in Paris, New York and Los Angeles time. The average response to a guest message is nine minutes; the average inquiry-to-confirmed-booking time across the portfolio is thirty-eight hours.

The same desk handles every detail of a stay: pre-stocking the fridge to a guest's preferred grocer, booking the chef de cuisine for the final night, chartering a seventy-metre Burgess for a day along the Estérel, arranging a Monacair transfer from Nice Côte d'Azur, sourcing a paediatrician on a Sunday morning, sourcing a black-tie florist at midnight. Culinary

Twenty-two vetted Riviera chefs. One signature closing night.

The concierge maintains an in-house private chef network of twenty-two vetted Riviera cooks — former brigades of the Hôtel du Cap, the Louison, the Grand-Hôtel du Cap-Ferrat, and three Michelin-starred kitchens in Antibes and Mougins. Each is interviewed in person, tasted in person, and re-tasted every eighteen months.

  • Dietary specialisation. Dedicated chefs for pescatarian, plant-based, kosher, halal, gluten-free, paediatric allergy menus, and FODMAP protocols — sourcing routed through the concierge, never left to the guest.
  • The closing-night tasting menu. A complimentary signature: on the final evening of every direct booking, a Villas Saint-Jean chef de cuisine prepares a six-course tasting menu in-villa, wines paired, service conducted by the chef and one assistant. It is the desk's quietest promise and its most quoted one.
  • Wine programme. Pre-stocking from local cavistes in Antibes and Saint-Tropez; sommeliers available for cellar dinners; broker access for first-growth Bordeaux and aged Bandol.
  • Children and multigenerational tables. Earlier seatings, simplified menus, two-kitchen protocols where grandparents and toddlers dine separately.

For guests arriving by sea — or by yacht, as an increasing share of our summer clients do — Villas Saint-Jean holds preferred-partner agreements with three of the Mediterranean's leading charter houses. The concierge handles the shore-to-yacht handover: tender collection at the villa's nearest mooring, provisioning loaded ahead of arrival, itinerary briefed to captain and chef.

  • Burgess Yachts. Day and weekly charters from 30 m to 80 m, with guaranteed berth handovers at Beaulieu-sur-Mer, Saint-Jean-Cap-Ferrat and Antibes IYCA.
  • Camper & Nicholsons. Sales and charter fleet of 1,600 vessels worldwide; concierge liaison for eastbound transhipments to Corsica or Sardinia.
  • Imperial Yachts. New-build and superyacht charter from Monaco; tender-to-villa coordination on Cap-Ferrat and in the bay of Pampelonne.

Charter availability, berth allocation and on-board services are subject to the operator's own terms. The concierge facilitates; the contract sits between guest and owner.

Arrival & Logistics

The most common anxiety of a first-time Riviera visitor is not the villa — it is the forty minutes between the aircraft door and the front door. The concierge's arrival team choreographs every minute.

  • Nice Côte d'Azur VIP terminal. Fast-track passport control, baggage taken to the vehicle, lounge access for accompanying guests; arranged for arrivals on commercial, private and fractional flights.
  • Helicopter transfers. Through three partnered operators — Monacair, Heli Air Monaco, and a third rotor service — from NCE direct to the helipads of Monaco, Saint-Tropez, or the private pad at Èze-sur-Mer where applicable.
  • Chauffeured ground transfers. Mercedes V-Class, Range Rover, or Bentley fleet (driver only), bilingual, ETA-tracked, water and phone chargers stocked.
  • Pre-stocking & childproofing. Fridges stocked to a guest-supplied list twenty-four hours before arrival; stair gates, pool fencing, outlet covers and night-nurses arranged on request, property-by-property.

On the last evening of every direct booking — and every guest who has stayed with us at least once returns to us, eventually — one of our twenty-two chefs arrives at the villa at four o'clock in the afternoon and does not leave until the last coffee has been poured. Six courses, paired wines, the table laid by the chef and one assistant, candles lit as the sun goes down over the Esterel. It is not in the invoice. It is not optional. It is, in a small way, the reason we have been doing this since 2009.
